A different kind of post...

Hey guys! As if you couldn't already tell, I'm kind of at a loss for post ideas lately. My brain has just been focused on other things (i.e. writing and the HOT, HOT weather!).

So, today, my post is going to be a little off topic. It's also going to be super yummy! (You'll understand why in just a minute.)

I don't know about you, but one of my favorite seasons is Fall. I love it for many reasons, like the cool crisp air filtering through my open windows. There's nothing better than opening all the windows in the house on a crisp Autumn day. The beautiful color the leaves turn just before they fall. Even though I HATE,HATE,HATE raking said leaves. But mostly, I love Fall because it's a perfect excuse for me to bake. Things like this, especially.

So today, I'm going to share with you my recipe for Pumpkin Pie Muffins. And you know what's even better??? These super moist muffins are low-fat and low in calories! And I promise, you can't even tell! (You're welcome!)

Pumpkin Pie Muffins
1 1/2 cups unbleached flour
1/2 tsp. groung cinnamon
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
3 egg whites
1 1/2 cups sugar
1/2 cup fat-free vanilla yogurt
1 cup canned pumpkin (Canned Pumpkin Pie Mix can be substituted for additional calories.)
Preheat oven to 350 degrees F. Line muffin pan with muffin cups and mist each one with cooking spray.
Sift the following ingredients into large bowl and set aside once finished: flour, salt, cinnamon, baking soda, baking powder, and nutmeg.
In a different large mixing bowl, combine the following: yogurt, egg whites, and sugar. Mix until blended. Stir in pumpkin. Add dry ingredients to pumpkin mixtures and mix until no flour is visible.
Spoon mixture into muffin cups (I filled mine with 2 ice cream scoops per muffin cup), and bake for 20 mintues.
Viola! Beautiful, moist, Pumpkin Pie Muffins!
This recipe makes approx. 18 muffins and each is only 109 calories. They're super yummy, I promise!
