Breakfast. It's got to be the best meal of the day, right? There are just so many different options--sweet or savory. Proteins or yummy, delicious carbs. Coffee AND orange juice!!! I could go on and on, but I won't.
My Honey Bunny, like me, is a huge proponent of breakfast. Huge may even be an understatement. Is there a word bigger than huge? Whatever that word is..... that's him! Over the weekend I went to visit my Honey Bunny. I love going to visit him, not only because he's just so darn cute! Not gonna lie, that's the biggest reason, but also because I love the area he lives in. Austin is well known for 6th Street and the music scene, but they also happen to be cafe country. There are so many quaint little cafes to eat in. I haven't found one that I didn't like yet, and we've been to many a cafe over the last several months.
Round Rock Cafe. What did we get? The best and possibly worst waffle ever created! As a general rule, I try to eat healthy. Most of the time. Okay, okay. Sometimes. However when it comes Austin cafes and breakfast..... Never.
That is a picture of what we ate Sunday morning. It's a sausage stuffed waffle (aka: Heart Attack Special). One side has syrup and the other side sausage gravy. It was heaven on a plate. And the fruit romanoff that accompanied said waffle was the BEST FRUIT EVER! All I can say is, if you're ever in or near Round Rock, Texas, visit the Round Rock Cafe. You won't be disappointed.
Like I said before, generally I try to eat healthy. Sometimes it happens and sometimes it doesn't, obviously. Most people start their year off with a resolution of losing weight and counting calories, and while yes, those will always be good resolutions and ones I and every other girl in the world will probably always have, this year I resolved to eat more whole foods. I feel better when I eat whole, unprocessed foods. My skin is clearer and I have more energy. That alone is reason enough to do it, but sometimes it's hard. It's about more than just counting calories, but actually thinking of each and every product you put into your body and your recipes. I am in no way absolutely perfect when I eat, but I think it's important to at least make a conscious effort to try and eat healthier. To be healthier.
Which leads me to the point of this post. Pancakes.
Wait, what? That's what you were thinking, right? I know, when thinking of pancakes, healthy usually doesn't come to mind, does it? I mean, how could something that looks like this actually be healthy????
Oh, but it can. Pictured above are some of the most delicious pancakes I've ever tasted. Banana Oat Pancakes. They are both gluten and dairy free. They are SO GOOD! I have my good friend, Kristin, to thank for finding this recipe. Or maybe I should curse her for sharing it with me. Hmmmm.......
While healthy, they do have to be enjoyed sparingly. But if you are looking for a healthy option for breakfast, or are just tired of toaster variety waffles and pop tarts, you should try these! I promise you won't regret it!
